Heat oven to 400° F. Butter 4 300 milliliter ramekins.
Heat butter in saucepan over low heat until melted. Blend in flour, salt, and red pepper. Cook over slow heat, stirring constantly, until mixture is smoothe and bubble; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat and stir in cheese until melted.
Beat egg yolks until very thick and lemon colored, about 5 minutes; stir into cheese mixture.
Beat egg whites until soft peaks form.
Stir about 1/4 of the egg whites into cheese mixture. Fold cheese mixture into remaining egg whites.
Carefully pour into ramekins. Cook uncovered in a Bain Marie until golden
brown, 15 to 20 mimutes. Serve immediatly.
